Asparagus and Walnut Salad




Day 29

This is one of my favorite combinations: asparagus, walnuts, and grapes. Not your expected salad ingredients but try it. You'll be pleasantly surprised. If you want to make this into a more substantial meal you can add some sauteed salmon or grilled chicken. Even tuna would be great with this recipe. It's so easy and requires 5 minutes of your precious time. Let's be honest, if I can whip up a respectable meal in 5 minutes or less, I feel a little superwoman-ish. You can use any vinaigrette you like for this. Make sure you look at the ingredients list before you buy it. If you can't pronounce it, put it back on the shelf. Better yet, make your own. Salad dressing is easy and well worth the extra few minutes. Below is one you can try.

Recipe:

1 bunch of asparagus, chopped into 1-inch pieces

1/2 bag of red grapes, divided in half

1-1/2 cups walnuts, chopped

1 cup feta cheese

grilled salmon or chicken (optional)

Balsamic vinaigrette (see recipe below)

Directions

Toss all ingredients together in a large bowl and serve immediately

Dressing:

2 Tablespoons balsamic vinegar

1 Tablespoon red wine vinegar

1 Tablespoon Dijon mustard

1 teaspoon light brown sugar

1 garlic clove, crushed through a press (optional)

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

3/4 cup extra virgin olive oil
