Note to self: Food photographs well on washing machines. The blue glow is just for you, readers. I worked hard for that. So today at lunch, the girls and I were discussing the need for a healthy version of fruit pizza. You know what I'm talking about. It's the classic pitch-in dessert that's gone in 60 seconds and is one of my absolute favorites. BUT...it's absolutely not good for you. Here's why. Usually the crust is made from sugar, butter, and little else worth noting on the nutrition map. Then it's topped with a very fattening cream cheese concoction. It's only redeeming quality is the fresh fruit. So I set out to find a new and healthier way of making the same dessert. Not an easy task, but I think I did it. Let me know what you think, but I'm pretty sure we have a winner. Plus these pizzas are personal pan. Cute? Yes.
Recipe
gluten-free frozen waffles, thawed (I chose Van's, but there are other good options. You'll find them in the health food section of the grocery store)
organic Greek fat-free plain yogurt
agave nectar or raw honey
fresh fruit (berries and kiwi are my favorites)
Directions
Stir 1 tsp. of agave nectar or honey into the yogurt. Spread the mixture on top of the waffles and top with fresh fruit.

I like the blog a lot. I didn't know if you were aware that if you put yogurt in a cheesecloth and let the whey run out it is very much like cream cheese. When I want to make recipes that call for cream cheese, I just make my own with yogurt. That will bring your fruit pizza even closer to what you are trying to imitate and still be healthy.
