So sometimes you just need a convenient snack you can throw together without the mess and without running through the drive through. I love trail mix because it's super healthy and so convenient when you're in a hurry. I also like things the way I like them (shocking for those that know me I'm sure :), so it's fun to mix and match ingredients and create your own version of trail mix. That's why I'm not going to give you a recipe, per say. Instead, I'm going to give you some ideas for making your own, just the way you like it. I like to keep many of these "throw ins" on hand so when I'm rushing out the door, I can grab a bag on my way out. Here's an idea I'm going to try. Make a big batch of it and divide it among mini snack-size bags or individual containers. Store some in the freezer to keep it fresh and some in the pantry for those days when you just need a healthy snack, and fast. It's an ongoing joke in my family that when I'm hungry I am no longer a joy to be around. If I become irritable, there's almost always the "Has anyone fed her recently?" that follows. My mom will forever carry the famous Cheerios yellow circle container in her purse because of me. Let's face it. It's better to be safe than sorry.
