10 Minute Apple Cinnamon Rolled-Oat Oatmeal

Maybe you aren't obsessed with breakfast in the same way that I make a beeline for the kitchen when I wake up in the morning. Maybe you don't get a mini high off of creating a new concoction of oats and fruit, nuts and seeds...It's maybe not your thing. If so, we'll never have enough in common to be friends. But seriously. Oatmeal is such a great breakfast choice. It's easy, it's fast, it's healthy and you can almost throw in the kitchen sink with your dried apricots and it will turn out fabulous every time. Oatmeal provides a solid start to your day with tons of nutrients, fiber and protein to get your metabolism revved. So what's the big deal about breakfast? It's huge. The problem is that eating breakfast for many of us means a lot of other unhealthy habits: the latte the size of your head, sugar-coated-cocoa-peanut-butter-cinnamon crunch cereal with a grand slam side of chemically compounded meat product and a host of God knows what else. Study after study shows that our bodies need a good surge of nutritional energy from the get-go. Now tell me that doesn't look like a breakfast of champions.

Recipe: Serves 2

1 cup steel-cut or rolled oats (old fashioned oats)
1 chopped apple
½ cup walnuts
¼ cup raisins or cranberries
1 tsp cinnamon
1 ¾ cup water

Directions

1. Combine oats, water, apple, and raisins in saucepan on stove. Bring mixture to boil.

2. Reduce heat and simmer for 6 to 8 minutes until thick. Remove from heat, stir in cinnamon and walnuts. Enjoy!
