I knew Marina and I were kindred spirits when she told me I should make a salad made with cucumbers, tomatoes and red onion. It's one of my favorites, and I have it more often than not in the summertime it seems. The key to success here is ripe tomatoes. They have to be. Otherwise, you might as well just trash the whole thing. Ok that's dramatic, but now is the perfect time to make this salad because tomatoes are everywhere and so delicious. Bonus: it's quite aesthetically pleasing as well. Not that I have to have pretty food, but it's nice to look at right before you devour it. Recipe: Serves 4-6
4 tomatoes, chopped
2 large cucumbers, peeled and sliced
1 large red onion, chopped
1/4 cup fresh cilantro, chopped
juice of 1 fresh lime
salt to taste
Directions
Mix the tomatoes, cucumbers, red onion, cilantro, and lime juice together in a bowl. Season with salt to serve.
