Pizza Makeover


Day 8

If you aren't in the mood for a thick crust, double-the-cheese order of hypertension, this pizza idea is a lighter version of an American favorite. You can make it a thousand ways, but tonight we used tomato flatbread as the cracker-like crust. If you want to grill the pizza, make sure you have some kind of platter to put the pizzas on because the thin crust will burn easily. We sauteed onions and peppers and threw them on top. I had leftover homemade pesto from this week too, which makes an interesting alternative to the classic tomato sauce. With a pizza packed with vegetables, you won't even need the cheese. Here are some ideas if you want to get crazy...

Sauce:
Olive oil
Pesto

Crust:
Spinach, tomato, or herb flatbread
Whole wheat or 100% whole grain pizza crust

Toppings:
Sauteed onions and peppers
Grilled pineapple with a dash of paprika
Sliced pears with grilled chicken
Sun dried tomatoes and mushrooms
Broccoli, red onion, and grilled chicken
Sauteed spinach and artichoke hearts
Grilled zucchini and squash
*Get creative with seasonings and herbs. A little goes a long way. Fresh cilantro is one of my favorite pizza additions.
