Day 14
Raise your hand if you don't feel like cooking. Ok great, me neither. It's ok. You have those days when the Steak N' Shake drive through is calling your name. Convenient comfort food is a powerful little devil. The majority of us live crazy insane lives with a thousand items on the to-do list and certainly not a thousand ways to accomplish them all. In my case, I have been out of town all weekend, I'm sleep deprived, and I got home from class at 11:00 p.m. I'm only asking for a small pity party here. No violin solo necessary. So on nights like tonight, I can't muster the strength to put on my Julia Child apron and get the double boiler out. I just can't. Don't worry, hope is not lost. PB&J can be redeemed. It carries a bad rap but nothing a little almond butter, gluten-free bread and fresh fruit can't fix. So turn on a movie, relax and enjoy this kid-friendly, heart-healthy sandwich. I am! Trust me. It's just what the doctor ordered.
Recipe
2 slices Gluten-free brown rice bread (Food for Life makes a great one. It's in the freezer in the organic section)
1 oz. almond butter (check the label. It should have one ingredient.)
1/4 banana, sliced
1/2 cup fresh raspberries, cut in half
honey (optional)
