Easy Hummus


Day 4

Farmers Market today was a success. The loot included peaches (not without a solid sales pitch that I couldn't refuse), tomatoes, cucumbers, zucchini, squash, onions, and some homemade organic pita chips. So today's recipe is one everyone should have on hand. It's kind of the go-to healthy alternative to cheese and crackers. Hummus can be made a thousand ways, and I personally like mine a little on the spicy side, but it's also great to add some sundried tomatoes if you have them. Cut up some red peppers, cucumbers, carrots, and celery for a good lunch/snack option.

Ingredients

1 (15 ounce) can garbanzo beans, drained, liquid reserved

2 ounces fresh jalapeno pepper, sliced

1/2 teaspoon ground cumin

2 tablespoons lemon juice

3 cloves garlic, minced

Directions

In a blender or food processor, combine garbanzo beans, jalapeno, cumin, lemon juice, garlic and 1 tablespoon of the reserved bean liquid. Blend until smooth

  1. would it be healthier to use dried beans if you have the time? And I assume that if I don't do spicy food that I just leave out the jalapeƱos?

  2. yes, and you can leave out the jalapenos. You could add a little extra garlic if you wanted more flavor too.
